Fennel Pesto My family recently discovered how sweet roasted fennel is and I heard that fennel pesto was great. Here is the simple recipe I used:

  • fennel from 4-5 bundles

  • olive oil 1/2 cup to start pouring gradually into blender

  • teaspoon of garlic (depends on you)

  • splash of lemon juice

  • tablespoon of almond butter

  • salt and pepper to taste

Get a good food processor and blender, be patient, throw in the olive oil, garlic and one handful at a time throw in the fennel pulsing the blender until it can handle all the leaves. Add the almond butter, lemon, salt and pepper according to your taste.

Ideas: makes a great carrot dip, burgers, patties, shrimp, kabobs…
