Bed of spinach
Lemon pepper chicken
Apple cider vinegar
I am fortunate to work at a school that provides a daily salad bar. Each day I am guaranteed some kind of green (lettuce, spinach or mix) as well as some kind of extra (cucumber, tomato, peas or more). With that said, I have no excuse. I lean on the things I love such as sweet potato, beets, and yams, alongside the things I need (protein) and focus on the fresh flavors instead of drowning them in sauce and changing them into what I think they “should” be.
